Margarita Cupcakes

I stalk homemaking/cooking/crafty blogs all the time [or used to before my class] and LOVE to get tips from other people. I come from a family of very creative and talented women and I'm having a hard time finding my niche! haha! Okay okay, I take nice pictures. But Aunt Cathy makes the best dutch apple pie, Aunt Cindy makes lemon merangue and carrot cake and she's AMAZING at quilting/sewing, Grandma takes the prize for her Chocolate Strata pie and pasties and have you ever had my mom's Lasagna and looked at her scrapbooks? UGH. Talk about pressure! So that is another reason I took on the once-a-week cooking endeavor. This week Shanna helped out and we made Margarita Cupcakes. WOW. This is not like the guinness ones, these are GREAT. You must make!

Recipe first: [commentary in brackets]
INGREDIENTS
Cupcakes:
1 box white cake mix [we used a super moist one]
8 oz liquid margarita mix [we used sweet & sour]
2 oz tequila
1 oz Grand Marnier [we used triple sec..cheaper!]
3 egg whites
2 Tbsp vegetable oil
1 Tbsp grated lime zest [use as much as you want, it looks super pretty]

Lime Buttercream Icing:
[we bought butter cream icing]
8 Tbsp butter, softened
8 oz cream cheese, softened
2 Tbsp lime juice (approx 2 fresh limes)
1 Tbsp margarita mix [again sweet and sour]
1 tsp lime zest
5 cups powdered (confectioners’) sugarcane sugar & fresh limes (for garnish)*****
DIRECTIONS
1. Preheat oven to 350º and prepare muffin pans.
2. Combine margarita mix, tequila, and Grand Marnier in a large glass and stir well.
3. In large bowl, combine cake mix, egg whites, lime zest, vegetable oil, and margarita mixture from step one. Stir ingredients together, then beat with an electric mixer on low to medium speed for approximately 2-3 minutes.
4. Spoon the batter into prepared muffin pans. Fill each cup/liner about 2/3 full.
5. Bake at recommended temperature on cake mix box (usually 325º - 350º) for 20 - 25 minutes or until toothpick inserted into the center of a cupcake comes out clean.
Icing:
6. In a large bowl, combine butter, cream cheese, lime juice, margarita mix, and lime zest. Beat with an electric mixer until light and fluffy.
7. Add powdered sugar, one cup at a time, and continue beating until smooth. If icing is too thin, add more powdered sugar, a couple tablespoons at a time.
8. Spread icing generously on each cooled cupcake* or use a pastry bag to frost. Sprinkle cane sugar around the edges of the cupcake for a “salt rimmed” look and garnish with lime wheels & wedges.
*Make sure to remove cupcakes from pan and cool completely before frosting.

So what happened was.. we started making our cake mix and totally forgot they were supposed to be margarita style, haha. Oh the kitchen is not safe around me! It just isn't! We added tequila, triple sec and sweet and sour to taste. Turns out we don't have a zester! We improvised with a grater and some elbow grease. For frosting we just added triple sec to the frosting and put it back in the fridge to thicken. All mishaps aside, these were GREAT! Maybe house warming party?
Haha, she's like uh how are we going to do this with a cheese grater?
Having a good hair day, not such a great belly day. ::sad face::
Halfway! My maid of honor!Pretty! As you can see, we didn't decorate with limes. It was 10 and we said forget that!
